Love pizza casserole but hate how heavy it feels after?

This version keeps the flavor… but upgrades the ingredients so you can enjoy it and still stay on track.
Why This Works?
Instead of regular pasta, this recipe uses sweet potato noodles.
They’re:

Plus, they hold their texture better than zucchini when baked.
Ingredients (Serves 10)
- 3 sweet potatoes
- Sea salt and black pepper
- 2 tsp olive oil
- 2 tsp minced garlic
- 1 yellow onion, chopped
- 1 bell pepper, chopped
- 1 lb pork sausage
- 1 small can sliced olives (drained)
- 3 tomatoes, chopped
- 1 jar tomato basil sauce (no added sugar)
- 30 nitrate-free pepperoni slices
- ¼ cup fresh basil
Directions:
- Preheat oven to 425°F and lightly grease a casserole dish.
- Spiralize the sweet potatoes into noodle form. Place in the dish and season with salt and pepper.
- In a pan, heat olive oil and garlic. Add onion and cook until soft. Add bell pepper and sausage, cooking until browned. Drain excess fat.
- Stir in olives, tomatoes, sauce, pepperoni, and basil. Let cook for a few minutes.
- Pour mixture over the sweet potato noodles. Cover with foil and bake for about 25 minutes, until noodles are tender.
